Dersin Amacı	Main focus in this course is two-fold, one is the introduction of fundamental knowledge related to food quality assurance systems and standards, the other is to get students to gain and develop practical knowledge and practices on Hazard Analysis & Critical Control Points (HACCP)-applications.
Dersin Tanımı	Differing from each others in some ways, several main food quality assurance systems are currently in practice. Common in these systems, the concept, Hazard Analysis & Critical Control Points (HACCP)occupies an important place in assuring the food safety. During this course, main food quality assurance systems will primarily be reviewed, after that, main emphasis will be given to the concept, Hazard Analysis & Critical Control Points (HACCP).The subject will be studied by reviewing fundamental principles and its application to different food production groups. Moreover, the student will be introduced a pc -based program for the HACCP evaluation and complete an assignment using the program
